What is the trouble with fats-Know it?Fats absorbing Food


Fat has been flogged—and continue to be flogged—as dietary enemy No-1. The world wide paranoia has fueled a growth industry whose exertions sometimes border on the schizophrenic – fat free ice cream, egg-less mayonnaise.

Trapped in this mind set, it’s easy for us to forget that fat is an essential component in a healthy diet. What’s more, it’s found whether in big or small or trace amounts in virtually every natural food on earth, so that it would be well nigh impossible for anyone to sit down and compose a truly fat free diet.
Among the different function that fat performs in the body
·         Fat is the most concentrated source of energy (calories). One gram of fat delivers 9 calories.
·         Fat is necessary for your body to be able to absorb the fat soluble vitamins( A,D, E and K)
·         Fat provides the essential fatty acids that we all need in small amounts.
·         Finally, as everybody know, fat is what makes food taste good. It also brings aroma and texture.
Fat becomes troublesome only when we over indulge our Fat tooth, even more so when we over indulge in the so called “Bad Fats”- Saturated Fats- which are the ones that clog our arteries and put us at risk for heart disease. Here’s what you need to know about the various types of fat and how and why you must control your intake of them:
·         Saturated Fatsare those that are solid at room temperature i.e. the main fats of meats, whole milk and dairy products and some vegetable oil such as coconut, palm and palm kernel oils. They are saturated with hydrogen- that is, they have a hydrogen atom at every binding site.
·         Monounsaturated fats are those that have a single pair of hydrogen atoms missing- for instance the main fats in groundnut, olive and canola oils.
·         Polyunsaturated fats have two or more pairs of hydrogen atoms missing for instance, the main fats in corn, sunflower, safflower and soyabean oils as well as in fish oils.
All fats are mixture of all three kinds of fatty acids- it’s just that one type predominates more than the others. Thus groundnut oil may be called monounsaturated oil, but it does not contain both saturated and polyunsaturated fat, too
What chiefly need to know about the difference between these fats is that saturated fats increase your risk of heart disease where as unsaturated fats(in controlled amounts) do not and in fact, have protective effect. Saturated fats raise your blood level of cholesterol which collects on artery walls, eventually constricting blood flow, especially to heart.
A fats that’ often lost sight of: the saturated fats in our foods have a greater adverse effect on blood cholesterol than does the cholesterol in our foods.

Calories are not a problem, unless….

Calories don’t become a problem until you’re taking in more calories than your body uses for its energy, repair and growth needs.
If the calories you expend in metabolism are less than the calories you consume, the excess calories are store as body fat. If your calorie intake exceeds your calorie need by even 1% over a period of a year you’ll put on 1 extra kilo of body fat.
Obesity is not just a cosmetic problem, it also put you at higher risk of all kinds of other health problem; from heart disease to diabetes, from high blood pressure to certain cancers.
The key to avoiding this, keep your daily calories within the limits that will meet your needs, and no more. And how much would that be? No standard answer can be given for everyone, because it depends on your age, sex, height and overall body type, the rate at which your body burns calories (i.e. your metabolic rate), your level of activity. Whether you’re already suffering from a chronic illness, are pregnant or on other special health situations. As an overall guide, the following ranges have been suggested for healthy Indians by an expert group IMCR 2009

Interestingly , however, these daily allowances are across  the board higher than those currently suggested by the official US Guidelines. As comparative instances, the American allowance for a sedentary woman is 1600 daily calories for most moderately active and many sedentary men 2200 calories; and for many active men and some very active women, 2800 calories.
There are reasons for discrepancy. The ICMR recommendations tilt to the higher side to take into account the majority of Indian population, which is rural physically highly active and nutrientionally deficient. In contrast most of the India city dwellers live a sedentary life style. That is why we continuously see people who though they may well within the daily calorie limits laid down by the ICMR are still overweight. Their lifestyles are not active enough to burn those calories.
What’s more, calorie guidelines such as ICMR’s often do not work in real life because they have been derived from populations as a whole. Where as individuals differ widely in their basal metabolic rates. Such estimates therefore are not strictly applicable on an individual basis.
Today, nutritionists recommend a division of daily calories into 10 to 15% calories from proteins; 60% from carbohydrates; and 25 to 30% from fats. Those who need to lose weight may need to keep their intake of fat calories even lower.
But, apportioning there percentages on to your plate is not the easiest of things to do on a daily basis. Instead two simple guidelines:
·         Check whether we have maintaining your weight
·         Check whether your weight falls within the healthy range limit for you.(The detail can be seen in my other post” A Weight loss method that work”)
If you meet these two criteria, you do not have to spend time working out calorie count. If on the other hand, your weight has been increasing and is well above healthy limits, you need to work out physical ways to lose excess weight while not cutting back on essential nutrients. Low Calorie, No Calorie, Zero Calorie, Calorie-Reduced...?

                   It seems that no word in the lexicon of nutrition has been as greatly reviled as the “Calorie”, as persistently sought to be squashed out of existence- or as much a cause of such widespread paranoia over so many decades.
                But what, exactly, are these dreaded, hated calories? Nothing but the fuel that body needs to keep it going: to provide the energy you need not only to walk, knead the dough or make love, but to carry out the various bodily processes that go on silently through the day whether you are aware of them or not—such as keeping your heart beating, 70 times a minutes, 60 minutes as hour, 24 hours a day, 365 day a year for say 75 years a hopefully many more.
                Your body also needs calories to carry out repair jobs on its tissues, and finally, for growth—not just through childhood and adolescence but through nine month of pregnancy during which microscopic single cell increase in weight about 6 billion times. All these activities require the body to burn calories, and collectively they constitute your body’s metabolism.
                Where does your body get these calories from? From three nutrients, and from one other source—alcohol. The nutrients are carbohydrates, fats and proteins (not vitamins or minerals—they are zero-calorie!). But these nutrients bring in varying amounts of calories.
                Carbohydrates are said to be the body’s primary fuel because they are so rapidly burned for use. Carbohydrates come from two kinds of foods- sugars and starches- and, gram for gram, both bring in the same number of calories. But there’s a vital differences.
                The carbohydrates from sugar bring in only calories and little or no other nutrients. The sugar is not just table sugar(Know as sucrose), but also the sugar found from fruits(Called fructose), in honey(Chiefly glucose and fructose), in milk (lactose), and in a variety of processed foods (One or more different sugars). All these sugar are said to bring in “simple carbohydrates”.
                In contrast, the carbohydrates from starches are called “complex carbohydrates”. They are found in grains and grain products (such a breads, chappatis, popcorn and macaroni), some vegetables such as potatoes, and beans and peas. Such foods contain several essential vitamins and minerals in addition to their carbohydrates.
                Complex carbohydrates release their load of calories gradually and over a longer period of time than simple carbohydrates do. This slow release them a much better source of sustained energy levels.
                But sugar or starch, every gram of carbohydrates brings in 4 calories.
                Proteins-Though another source of calories, are generally not used by your body as fuel. They are burned for energy only when other sources, such as carbohydrates or fats, are in woefully inadequate supply. Nor is it healthy for your body to burn proteins for energy- protein is required for other vital functions that cannot be performed by carbohydrates or fats. It forms the basic material in all your body’s cells. Besides enabling growth and repair of these cells, protein also helps to form the antibodies that fight infection.
                Protein can be obtained from animal source(meat, eggs, fish and dairy products), as well as from vegetarian sources(dry beans and peas, pulses, nuts and seeds)
                Each gram of protein (like each gram of carbohydrates) brings in 4 calories.
                Fatsare the most concentrated source of calories. Every gram of fat brings in 9 calories- more than twice the amount contained in a gram of either carbohydrates or proteins. That is why foods high in fat bring in the most calories. They include cooking oils and cooking fats( such as lard), dairy product such as milk, cream, butter and cheese, red and white meat and meat products such as sausages, certain fishes like mackerel like cakes, biscuits, sundaes, potato chips, samosa, pakoras, salad dressings, mayonnaise, hard margarines and chocolates.
                Most foods are higher in one source of calories than in another. But most foods contain all three sources- Carbohydrates, fats, proteins- to some extent or the other.
                Alcoholis not considered a nutrient, but it also brings in calories: 7 calories per gram. That’s high, considering that alcoholic beverages not only bring in little or no other nutrients, but can in excess cause nutritional deficiencies

Will alcohol keep your arteries healthy?
Will coffee put you at risk for heart attack? Cancer? Miscarriage?
Can you get all the nutrient you need from just the food you eat?
         Depends on whom you ask. And that sparse, and admittedly unsatisfactory, reply is a nutshell representation of the cataclysmic confusion that pervades the aisle of Nutrition today.
There is no market as rich in hype and hokum, ignorance and befuddlement, as that whose raison d’etre is to tell the rest of us what we should be eating.

              Nutritional experts want to improve the state of our health, of course, but not only do they often disagree on the nitty-gritty, they also haven’t has much success in transferring their fat percentage formulae and dietary pie-charts to practical use in our kitchens and on our dining tables. Manufacturers and snake-oil peddlers, on the other hand, are driven more by commercial incentive than by concern for our arteries or our carbuncles. The research establishment is plagued by God’s own confusion, with today’s “finding” being contradicted by tomorrow’s “confusion”. And the government is often pulled in so many contradictory directions by so many diverse lobbies that is generally ends up doing nothing (should non-iodized salt be banned? Should salt be fortified with iron? Should Gutkha be outlawed?)
Bombarded with inconsistencies in the nutritional messages he gets, the consumer at the receiving end of it all adopts one of three philosophies of personal nutrition.
(i)                  The You might get hit by a track at any moment Philosophy. So eat up today, and don’t pay a paisa’s worth of attention to all those nutritional trigger-words: fats, triglycerides, cholesterol, sodium.
(ii)                The Live-to-eat-moong-sprouts philosophy. Its acolytes have made the study and practice of nutrition the sole focus and chief end of their existence; their conception of nirvana is steaming bowl of yellow pumpkin soup. Their idea of the perfect birthday gift is a three year subscription to vegetarian times.
(iii)               The Hem- and-haw and hedge-and- hum philosophy. Its choristers make mounds of dietary resolutions, worry in spurts about whether they really should be eating more vegetables and fruits, and generally end up homing in only on the advice they think they can live with. (Drinking only mineral water in a restaurant is fine, but having your tea with skim milk doesn’t sound so do-able.
          Even if we try to grasp the fundamentals of good nutrition, realties on ground can trip up us on daily basis. Fiber helps to prevent constipation, you know that, but does an apple contain more fiber than a pear? Are some” good” cereals better than other “good” cereals? Which cheeses are lowest in fat? If you’re dining out, how do you calculate the calories in a mushroom moussaka or an eggplant almond enchilada? And even if you exercise personal control over what’s going into every morsel you eat, how do you know whether you are getting your daily requirements of a score of nutrients unless you convert your kitchen counter into a data processing center?
         In a word, is there a way to healthy eating that is not rigged with calculation, contradictory advice, research babble, anxiety and guilt? Can we cut the pedantry and talk about real eating in the real world?
            In a word, yes. You don’t have to wade through an encyclopedia of nutrition or be frozen by realization that you’ll never be able to work out whether you’re getting to much fat in your daily diet because you were looking out the window when they were teaching percentage in school .  In this, my next posts we will discuss all the nitty-gritty you need to make wise nutritional choice to ensure that food becomes your ally rather than your adversary in the fight against disease and aging.

Eat up slim Down.

If you had to sell yourself what selling advertisement you like to give. It should be like this “ 41 years old, look 30, successful IT professional ,Financial secure, with healthy BMI, no drink and no smoking no any medical problem.
Afraid not? Would you more probably be scrambling around to conceal in your copy more than you reveal? Such as the minor detail that, though you have left 40 some way behind, the last time you had a head to toe was two years ago? That you have been digging into too many chicken nugget of the McDonald variety, too little of vegetables and fruits? That you are so attached to the gerbil wheel you have drawn up adoption papers? That you are feeling old and decrepit and done in before your time?

If yes, you are in great company- great as in great numbers. There’s something dire, not to say depressing, virtuously saying no to red meat and drinking mineral water with enough self discipline to fuel a military regiment, the number of overweight, under exercised, hypertensive, coronary- blocked, diabetic men and woman in on the rise.
What’s more, this graphic ascendancy in numbers of the unfit and unhealthy seems to be in direct proportion to the rising tide of health information, messages, ads and advice coming our way via the media, manufacturers, televangenlists, cyber cranks, hypermeisters, the corner chemists, the health food-store clerk, the neighborhood quack.
A sad and startling testimonial to our times and trends. What’s happening here? Part of the answer- but a fairly large part of it—is that there’s such a sheer volume of health information., and so much of it is so uneven and contradictory, that any attempt to put even of it action causes most of us to freeze into inaction…Is that new weight-loss pill you read about last week the answer to your prayer? Should you believe the diehard vegetarianism lobby that still claims that eggs are lethal for your heart? Will blue green algae detoxify your body? Can ozone therapy cure” many viral diseases, including cancer and AIDS” as one internet sales pitch claims? You can burn fatter watching TV than exercising? And do you honestly see yourself ever getting around to calculate the fat calories in your daily diet?
In other word, is there a way you can cut a swath through  the erudition, the fluff and the sheer drivel and get to the basics---only what you need to keep tabs on your personal bottom-line in health without getting into bumper to bumper traffic on the information highway? After all, all you want and need are the answers to a few simple questions. Such as is there a snappy way of knowing whether you need to lose weight from health point of view? And if so a guaranteed way to do it. Easy, clear cut guidelines to eating right. Foolproof exercises to build bulging biceps. New ideas on how to reignite the embers of your sex life. Get to sleep without daily pill. Boost your energy levels.. master stress.. and banish depression.
The fundamental of good health is really simple. And not a whack to wallet either. You don’t need to seat buckets or put down good money on weekend at a health spa. Easy, inexpensive steps are most that average people need to take to bring about significant changes in their lives.

It is also the primary criterion that should guide  most of our major decisions. Whether it is taking up new job responsibility, having a second child or shifting residence. Unfortunately, good health is a blessing that majority of us don’t fully appreciate until it is compromised or gone.
Choose life. Do whatever you can to stay alive and to be as you can. Forget fear, doubt and confusion. Think the action. Positive action.
